As a triathlete who hopes someday to do the Hawaiian marathon, Chef Sawyer spends much of her spare time in training. Also, she is highly trained in the healthy, innovative culinary techniques of the Canyon Ranch SpaClub at Gaylord Palms. The local "day boat" fresh fish selection permits you to keep to your own healty regime, if so desired, by having fish such as yellowtail, Chilean sea bass, pompano or Gulf Coast grouper grilled or broiled, with sauces or not. Other cooking possibilities are sautéed and blackened. Sauces include beurre blanc, ponzu, remoulade, and Mediterranean salsa (Kalamata olives, lemon, olive oil with tomatoes, cucumbers and onions). Also, vying for popularity with the clientele are potato crusted snapper, herb rubbed mahi, jumbo lump meat crabcakes, and fisherman stew. Naturally, you will have to dock at the Gaylord on your numerous sailing voyages through this tempting menu. For landlubbers a free-range chicken and certified Angus filet are available.
Desserts have the same creative whimsy and fun as the drinks, starters, and entrees. Why stick to convention when you can create excitement by doing something else? The key lime margarita is a slice of rich, tart pie flipped into a large glass topped with fresh strawberries and blackberries, baked meringues drizzled with raspberry coulis and topped with fresh whipped cream and a lime zest. Chocolate lovers will have their just reward with a chocolate ganache filled chocolate cake topped with fresh raspberries. While billed for two, the Key West Banana split may create a shipboard romance with its Ben and Jerry ice creams, chocolate, bing cherry caramel, raspberry tamarind, mango coulis, M&Ms and toasted almonds. For clients' physical and mental fitness, on property are the luxurious Canyon Ranch SpaClub, the outdoors art deco-styled South Beach pool, the nearby Falcon's Fire Golf Club, the well-equipped fitness center, and the immense atrium--just perfect for walking, climbing and people watching.
